Blue Spirulina Pancakes

ingredients
  

For the dough:

  • 100 g spelt flour
  • 1 tsp baking powder
  • 1 banana
  • 150 ml oat milk
  • 4 tbsp oats
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder
  • 2,5 tbsp maple syrup
  • 2 tsp blue spirulina powder
  • 1 tbsp chia seeds
  • 2 tbsp puffed quinoa
  • 1 handful of blueberries (optional)
  • 1-2 tbsp coconut oil for cooking

For the Cashew-Cinnamon-Sauce:

  • 2 tbsp cashewpuree
  • 1/2 tsp cinnamon
  • 1 tsp maple syrup
  • 2-3 tbsp water

Toppings:

  • 1 handful of blueberries
  • a few freeze-driedblueberries
  • Cashew-Cinnamon-Sauce

instructions
 

  • For thedough, put spelt flour and baking powder in a bowl and mix it.
  • Cut one banana, mash it with a fork and add it to the bowl.
  • Add oat milk, egg, oats, cinnamon, vanilla powder and maple syrup and mix it with ahand mixer.
  • Add spirulina powder and mix it in.
  • Add chia seeds and puffed quinoa and fold it in.
  • Optional: Fold in blueberries.
  • Heat a bit of coconut oil in a pan, put about 2 tbsp of the dough into it and cookit about 1-2 minutes from both sides. When there is no oil left, add morecoconut oil and take again tbsp of the dough. Repeat it until there is no doughleft.
  • For the sauce, mix all ingredients with a spoon.
  • Decorate the pancakes with blueberries and Cashew-Cinnamon-Sauce and enjoy it!
