For me, baked apples are simply part of the winter season, for you too? 😍 That’s why I have a slightly different version for you today, but it’s super easy to make and tastes delicious. Have you ever eaten a breakfast pizza? 🥰 The base is made of homemade granola and in this case I topped it with vegan vanilla pudding, baked apple and nut cream.

By the way, apples provide more than 30 vitamins and trace elements, but above all they are rich in vitamin C. They also promote digestion, destroy bacteria and “clean the teeth” due to their various fruit acids. And did you know that there are about 20,000 different apple varieties worldwide? You’ll find more information below.

Happy baking! ♥️

Natalie Lutz
prep time 25 Minuten
Dish breakfast
servings 1 small pizza (Ø approx. 16 cm)

Kochutensilien

  • 1 springform pan (approx. 16 cm)

ingredients

For the base:

  • 50 g oats
  • 1 tbsp flax seeds
  • 40 g coconut oil
  • 2 tbsp maple syrup (approx. 20 g)

For the coating:

  • 1/2 package of organic vanilla pudding powder
  • 250 ml plant drink (e.g. oat drink)
  • 1 tbsp coconut blossom sugar
  • 1 small apple (sweet)
  • 2-3 dried plums
  • 1/2 tsp cinnamon

Toppings:

  • 1 tbsp almond slivers
  • 1 tbsp chocolate drops (without refined sugar)
  • 1 tsp puffed quinoa
  • 1-2 tsp nut cream (e.g. hazelnut cream)

instructions

  • Preheat the oven to 180°C top and bottom heat.
  • Line the bottom of a round springform pan with baking paper and grease the sides with coconut oil.
  • Mix the oats with flax seeds and spread evenly in the springform pan.
  • Warm (not heat!) the coconut oil until it is liquid and mix with maple syrup.
  • Now spread evenly over the oatmeal, especially around the edges, so that it doesn’t break easily when loosening the form.
  • Now bake it for about 7-10 minutes.
  • In themeantime, prepare the pudding. Pour 50 ml of the vegetable drink into a bowl, add the vanilla pudding powder and whisk until smooth.
  • Pour the remaining 200 ml liquid into a pot, add 1 tbsp coconut blossom sugar and boil together.
  • As soon as it boils, remove the pot from the heat and whisk in the vanilla pudding powder mixture.
  • Place the pot back on the cooker and simmer the pudding for at least 1 minute at a low temperature.
  • Now put it in a bowl and let it cool down, stirring occasionally, for about 5 minutes.
  • Remove the finished base from the oven and let it cool down in the springform pan.
  • In themeantime, prepare the baked apple mixture. Wash the apple and cut it into small cubes. Dice the plums as well.
  • Heat some coconut oil in a pan and fry the apple cubes for about 2 minutes. Add the cinnamon and plums and fry for another 5 minutes.
  • Now carefully remove the springform pan from the pizza base, place it on a plate with the baking paper and spread the pudding evenly on top. Put the baked apple mixture on top and garnish with toppings.

GOOD TO KNOW

The apple – king of health makers, if there is no “chemical worm” in it
“An apple a day keeps the doctor away.”  Everyone probably knows this saying, and apples are indeed full of valuable nutrients. The healthy apple promotes digestion, destroys bacteria and “cleans the teeth” due to its various fruit acids.
But unfortunately, nowadays the conventional apple from the supermarket is sprayed about 20 times from blossom to fruit in order to accelerate the ripening process and improve durability (sometimes it is stored for up to half a year) and thus already represents a massive intervention in nature. What’s more, most of the nutrients lie directly under the apple skin, which is why it is essential to choose organic fruits.
As far as vitamins are concerned, apples have a lot to offer – around 30 different ones, but above all they contain plenty of vitamin C, B vitamins, especially niacin and folic acid, and provitamin A.
They also provide minerals such as potassium, calcium, phosphorus, iron and sodium, and over 300 bio-materials. These include organic acids that help detoxify the liver, tannins, essential oils and, above all, pectin with its healing and protective effect on the intestines and blood vessels.
The apple is actually considered a mini home pharmacy: if you eat it sober and slowly in the morning, it stimulates the bodily fluids and the mind and makes you fit for the day. In the evening, before going to bed, it has a calming effect. Furthermore, there are countless health advices about apples, e.g. they support the healing process in case of inflammations, stabilise the blood sugar, are considered an anti-cancer fruit and also have hormonal effects. Moreover, they not only have a cleansing effect internally, but also on the skin: for example, you can apply a 5-minute mask made of raw apple pulp.
A thing to watch out for: You should never eat apples very cold, because this can cause stomach and liver problems.

Nice To Know:
Did you know that there are about 20,000 kinds of apples worldwide? But only a fraction, about 1,000, grow in Germany. Nevertheless, the all-round star is the Germans’ favourite fruit – for almost 90%!
