For me, baked apples are simply part of the winter season, for you too? 😍 That’s why I have a slightly different version for you today, but it’s super easy to make and tastes delicious. Have you ever eaten a breakfast pizza? 🥰 The base is made of homemade granola and in this case I topped it with vegan vanilla pudding, baked apple and nut cream.
By the way, apples provide more than 30 vitamins and trace elements, but above all they are rich in vitamin C. They also promote digestion, destroy bacteria and “clean the teeth” due to their various fruit acids. And did you know that there are about 20,000 different apple varieties worldwide? Baked Apple Breakfast Pizza
Kochutensilien
- 1 springform pan (approx. 16 cm)
ingredients
For the base:
- 50 g oats
- 1 tbsp flax seeds
- 40 g coconut oil
- 2 tbsp maple syrup (approx. 20 g)
For the coating:
- 1/2 package of organic vanilla pudding powder
- 250 ml plant drink (e.g. oat drink)
- 1 tbsp coconut blossom sugar
- 1 small apple (sweet)
- 2-3 dried plums
- 1/2 tsp cinnamon
Toppings:
- 1 tbsp almond slivers
- 1 tbsp chocolate drops (without refined sugar)
- 1 tsp puffed quinoa
- 1-2 tsp nut cream (e.g. hazelnut cream)
instructions
- Preheat the oven to 180°C top and bottom heat.
- Line the bottom of a round springform pan with baking paper and grease the sides with coconut oil.
- Mix the oats with flax seeds and spread evenly in the springform pan.
- Warm (not heat!) the coconut oil until it is liquid and mix with maple syrup.
- Now spread evenly over the oatmeal, especially around the edges, so that it doesn’t break easily when loosening the form.
- Now bake it for about 7-10 minutes.
- In themeantime, prepare the pudding. Pour 50 ml of the vegetable drink into a bowl, add the vanilla pudding powder and whisk until smooth.
- Pour the remaining 200 ml liquid into a pot, add 1 tbsp coconut blossom sugar and boil together.
- As soon as it boils, remove the pot from the heat and whisk in the vanilla pudding powder mixture.
- Place the pot back on the cooker and simmer the pudding for at least 1 minute at a low temperature.
- Now put it in a bowl and let it cool down, stirring occasionally, for about 5 minutes.
- Remove the finished base from the oven and let it cool down in the springform pan.
- In themeantime, prepare the baked apple mixture. Wash the apple and cut it into small cubes. Dice the plums as well.
- Heat some coconut oil in a pan and fry the apple cubes for about 2 minutes. Add the cinnamon and plums and fry for another 5 minutes.
- Now carefully remove the springform pan from the pizza base, place it on a plate with the baking paper and spread the pudding evenly on top. Put the baked apple mixture on top and garnish with toppings.
