Raw-Vegan Date Cinnamon Stars

Again a delicious christmas recipe for you. Raw vegan cinnamon stars on date base 🥰 You don't need many ingredients and they are really easy to make. And there is an extra portion of minerals on top! Because dates provide an extremely high amount of potassium and belong to the fruits with the highest potassium content in the world. Three dates alone cover the daily requirement. They also contain valuable B vitamins and can even help you fall asleep. You'll find more information below.

ingredients
  

For the dough:

  • 150 g ground almonds
  • 100 g pitted dates
  • 2-3 tbsp almond cream
  • 2 heaped tsp cinnamon
  • 1 tsp maple syrup
  • peel of one organic orange

Erythritol sugar icing:

  • 50 g Erythritol (ground for a better icing)
  • 20 ml water
  • 1-2 splashes of lemon juice

Other:

  • 2 tbsp coconut rasps

instructions
 

  • Put all the ingredients for the dough in a mixer and mix to a sticky mass. Optionally you can also use a blender, but in this case you should soak the dates in warm water for about 1 hour before.
  • If the mixture is still too crumbly, add some water. Put it in the fridge for about 15minutes.
  • Then roll out the mixture between two sheets of baking paper about 0.5 cm thick and cut out with star-shaped cutters.
  • For theicing, mix all ingredients with a whisk (optionally use ground erythritol, then the icing will be better) and coat the stars with it. The icing with erythritol becomes solid both at room temperature and in the refrigerator.
  • Garnish with coconut rasps, let it dry and store in a cool place in an airtight container. They last up to 4 weeks.

Dates – the fruits of the Orient
They may not be low in calories, but they do contain a high dose of natural minerals! They are particularly rich in iron, calcium, magnesium, phosphorus, zinc and above all potassium. With 650mg per 100g, dates are therefore richest in potassium among the fruits in the world. Their content is almost twice as high as that of bananas and with three dates per day the daily requirement of almost 2000 mg is perfectly covered. We need potassium, among other things, for the regulation of our water balance and the mineral plays a central role for our vegetative nervous system. Potassium also lowers blood pressure, helps to regulate the acid-base balance and stimulates mental work.
But dates also contain valuable B vitamins and thus calm “fluttering” nerves. They also provide us with provitamin A, beta-carotene, which not only gives dates their orange-reddish colour, but also regulates cell growth in the body and controls the reaction of the immune system.
They also support our digestion, as they are rich in fibre, and thus also prevent constipation and diarrhoea.
The effects of dates on the sugar balance are less than with ordinary household sugar and all sweets made from it. Although they are super high in carbohydrates and therefore provide energy quickly, the numerous nutrients ensure that the sugar (from the carbohydrates) passes into the blood much more slowly.
 
Nice To Know:
Fresh dates today often come from Israel frozen. In the Arabian countries, dates have long been used as a natural sleeping aid for sleeping problems, because the amino acid tryptophane contained in them is converted in the body into the “sleep control hormone” serotonin.
