The perfect breakfast on a sunny day! 🌞 Who would like a tasty and healthy Kaiserschmarrn now? 😍 Well, I couldn’t get enough of it… 😉 With buckwheat flour it is perfect for people who can’t tolerate gluten and the combination with raspberry-chia jam completes the breakfast perfectly.

By the way, raspberries contain a lot of fibre, which has a positive effect on our digestion and intestinal flora and helps with constipation. And did you know that the raspberry is not really a berry at all? You’ll find more information about this below.

Gluten-free Kaiserschmarrn with Raspberry-Chia Jam

ingredients
  

For the dough:

  • 120 g buckwheat flour
  • 2 eggs
  • 60 g coconut blossom sugar
  • 200 ml plant drink (e.g. almond)
  • 1 tbsp coconut oil
  • 1 pinch of salt
  • 1/4 tsp vanilla
  • 1 handful of freeze-dried raspberries (optional: frozen raspberries)

For the jam:

  • 1/2 package of frozen raspberries (about 150 g)
  • 1 tbsp chia seeds
  • 1 tbsp date syrup or another alternative for refined sugar

Other:

  • Optional a bit icing sugar (made out of raw cane sugar) for the garnish

instructions
 

  • Separate the eggs and beat the egg whites until stiff. Set aside briefly.
  • Mix flour, coconut blossom sugar, salt and egg yolks with plant drink in a bowl to a smooth, thick dough.
  • Fold the stiff egg whites into the dough carefully.
  • Fold in the frozen raspberries as well.
  • Heat coconut oil in a large pan, pour in the dough slowly and bake for approx. 5 minutes until golden brown.
  • Check regularly (lift slightly to the side) whether the underside is already browned.
  • Then quarter the Kaiserschmarrn with a spatula, turn and bake on the other side until golden brown.
  • Then rip the Kaiserschmarrn into small pieces (preferably with 2 spatulas) and fry longer for a short time.
  • For the jam, defrost the frozen berries with chia seeds in a pot at medium heat.
  • Add date syrup. Stir until the berries have completely dissolved and a jam-like consistency is obtained. Puree if necessary.
  • Optionally, dust the Kaiserschmarrn with icing sugar and serve with the raspberry chia jam. Enjoy!

The raspberry – power berry for the gut
It belongs (like many other fruits) to the rose family and is probably one of the healthiest fruits in the world! Not all raspberries are red, there are both wild and cultivated plants that have orange, yellow or black fruits.
It is one of the fruits with the most fibre (approx. 6.7 g / 100 g!), which is mainly found in the seeds and has therefore a positive effect on the digestion and gut flora and can help with constipation. Intestinal movement is stimulated and the further transport of food components and their excretion is accelerated. They also increase the feeling of satiety, thus reducing the risk of obesity (overweight). It also contains many minerals, especially potassium, iron, magnesium and phosphorus, which stimulate metabolism, support bone formation, are very important for the proper function of the brain, muscles and nerves and are beneficial in cases of high blood pressure. It also contains many active acids, pectin and tanning agents that help the liver in its detoxification work and can reduce fever. The raspberry is rich in vitamins C and E too, and therefore counteracts inflammation and boosts the immune system.
It is also very low in calories (about 24 kcal / 100 g) and has a low glycaemic load, which means that it keeps the blood sugar level low and even.
 
Nice To Know:
Actually, the raspberry is not a berry at all, but belongs to the group of drupes (like strawberries and blackberries). If you take a closer look at it, you can see that it consists of many small drupes that stick together. Each of the individual fruits has a core, which is also very important for our health.
Btw: The real berries include fruits that you would barely think of! For example melons, kiwis, avocados, citrus fruits, dates and bananas.
