Its ORAC value (the value for the effect of antioxidants) is one of the highest and around 20 times stronger than vitamin E. In addition, grape seed flour contains over 50% fibre and is excellent for baking as it retains its valuable ingredients despite being heavily heated.

Chocolate Pancakes with Grape Seed Flour

ingredients
  

For the dough:

  • 200 g spelt flour
  • 1/2 package of baking powder
  • 1,5 tbsp grape seed flour
  • 200 ml plant drink (e.g. almond)
  • 1 banana
  • 30 g coconut blossom sugar
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder or tonka-bean
  • 25 g organic dark chocolate
  • 15 g coconut oil
  • 1 tbsp maple syrup     
  • 1 splash of lemon juice
  • 1 pinch of salt
  • Coconut oil for frying

Toppings:

  • 3 tbsp coconut yoghurt
  • fruits of choice (e.g. pomegranate seeds, apricots, grapes etc.)
  • 1 tbsp Cacao nibs
  • 1 tbsp Coconut flakes
  • 1 tbsp Puffed quinoa+ amaranth
  • A bit maple syrup

instructions
 

  • Peel the banana and mash it with a fork.
  • Mix spelt flour with baking powder and add all dry ingredients (grapeseed flour, coconut blossom sugar, vanilla, cinnamon, salt) and mix.
  • Add almond drink and mashed bananas and mix with a hand mixer.
  • Heat dark chocolate and coconut oil until it is liquid and add it together with maple syrup and lemon juice. Mix well again until an even dough is formed. If necessary, add a little flour or liquid if the dough is too firm or liquid.
  • Heat some coconut oil in a pan and add 1-2 tbsp of dough each. Fry at medium heat for about 3 mins and turn. Fry again for about 3 minutes.
  • Garnish the finished pancakes with toppings of choice and enjoy.

Grape seed flour – one of the most powerful antioxidants
It is obtained from the seeds of grapes by gentle cold pressing and has a dark brown colour.
The special thing about grape seed flour is that it retains its valuable ingredients when heated strongly. For this reason it is very good for baking, but only in proportion (5 to 10 percent) to conventional flours. Grape seed flour is also suitable for breading or flouring meat and fish. It can also be stirred into smoothies or juices (1 teaspoon per serving) or taken in the form of grape seed capsules. It is also a good addition to muesli or yoghurt.
Grape seed flour is naturally cholesterol- and gluten-free, is easy to digest and its fibre content is over 50%! Another special ingredient in grape seeds is OPC, a phytochemical. By being able to neutralise free oxygen radicals, OPC protects our cells as a powerful antioxidant. Free radicals can destroy cells or cell walls, which is why they are blamed for many health problems. The antioxidant effect is expressed by the ORAC value (Oxygen Radical Absorption Capacity). Grape seed flour is one of the foods with the highest ORAC value. The antioxidant effect is approx. 20 times stronger than that of vitamin E and approx. 50 times stronger than that of vitamin C.
The use of grape seed flour has many health benefits. Besides a noticeable tightening of the skin, you can boost the immune system, counteract allergies and you can also have success in fighting cancer cells. Recent studies from Kentucky show that grape seed extracts can also be used for programmed cell death of certain cancer cells. Insulin levels are also stabilised by consuming grape seed flour and vessel protection throughout the body has also been observed.
 
Nice To Know:
You should never take grape seed flour together with dairy products. The protein contained in them reduces the antioxidant effect of OPC.
And did you know that grape seed flour is also used in animal feed because of its valuable nutrients and active ingredients? It is processed by various manufacturers as a feed additive.
