Chocolate-Blueberry-Cookies

ingredients
  

  • 120 g spelt flour
  • 200 ml plant drink (almond drink/oat drink, etc.)
  • 2 tbsp grounded tigernuts (suitable for people who are allergic to nuts!)
  • 2 tbsp raw cacao powder (low fat)
  • 1/2 package of baking powder
  • 1,5 tbsp coconut oil
  • 40 g organic coconut sugar
  • 1/2 tsp vanilla powder or paste
  • 2-3 handful of blueberries
  • 2-3 tbsp chopped organic dark chocolate
  • 50 g dark chocolate coating
  • 1 tbsp rasped organic dark chocolate (optional)

instructions
 

  • Preheat the oven at 180° upper and lower heat.
  • Put all ingredients except blueberries, chopped organic dark chocolate, coating and rasped organic dark chocolate into a bowl and mix them with a hand mixer.
  • Fold in chopped chocolate and blueberries.
  • Put about 1 tbsp of the dough each time onto a baking tray lined with baking paper and garnish them with a few blueberries.
  • Put it for about 15 mins into the oven.
  • Let it cool down a short while.
  • Meanwhile, heat the chocolate coating and spread it later with a small spoon over the cookies.
  • Optionally, spread rasped organic dard chocolate over the cookies too.

Raw Cacao – A miracle cure, that makes us happy
First of all the most important thing: raw cacao is NOT the 100% cacao powder without sugar, neither the most cacao products and chocolates, because they are made with roasted cacao beans (also coffee for example) and therefore it isn’t raw cacao. Raw cacao is basically named unroasted cacao.
It has its origin in Central and South America and is gained from raw cacao beans, which are located in the cacao fruits of the tropical cacao tree. One fruit contains 30 – 50 beans! The powder results by cold pressing of unroasted beans. So all nutritional values remain
Raw cacao contains a lot of antioxidants, even more than green tea, red wine and blueberries. As a comparison: Blueberries contain 32 antioxidants, raw cacao 621! We need antioxidants for protecting our cells. They protect us against free radicals and are effective against early aging, cancer cells, regulate the heartbeat and blood pressure, improve the blood circulation and reduce the risk of a stroke and heart attack.
Besides, we generate feelings of happiness and well-being when we eat raw cacao due to different neurotransmitters. Serotonin for example is one of them. It works as an antidepressant and can also help when you have premenstrual paints too.
As raw cacao is very saturating, we reduce our appetite and support our digestion at the same time. Because of several flavonoids we produce less stress hormones and therefore we prevent the formation and storage of fat reserves. So to say: we can lose weight with raw cacao in a healthy way. Flavonoids also reduce the blood pressure and can help against Alzheimer.
In Addition, raw cacao provides us with a lot of magnesium, calcium, iron, theobromine (makes us awake!), B-vitamins and unsaturated fatty acids.

Nice To Know:
Did you know, that dairy products block the absorption of antioxidants? So a classic chocolate bar can cause more damage to our body than it would be good for us. That’s the reason why you should better enjoy cacao in a raw version. Cacao Nibs for example are suitable as an addition to cereals, homemade bars or cookies, toppings for smoothie bowls, etc.
